Famed Pastry Chef Michael Laiskonis Will Make Desserts at Mario Batali’s New Restaurant

Michael Laiskonis is widely regarded as one of the most talented pastry chefs in the industry, but since 2012, the Le Bernardin alum has worked as the Institute of Culinary Education’s creative director. Now he’s decided to finally return to a restaurant kitchen, joining the team at La Sirena — Mario Batali and Joe Bastianich’s long-awaited Italian restaurant inside the Maritime Hotel, which is set to open next month. Grub hears that you can expect Monte Bianco (a traditional Milanese dessert) with candied chestnuts, roasted pears, and whipped cream, and torta ubriaco with warm brioche, rum custard, roasted pineapple, and fiore-de-latte gelato.
