It’s a match made in health-minded heaven: The latest iteration of Dan Barber’s wastED project — which celebrates food waste — is a late-summer salad available at the New York locations of Sweetgreen. Available from July 28 to August 28, the salad includes broccoli leaves and stalks, romaine hearts, carrot ribbons, arugula, roasted kale stems, cabbage cores, shaved parmesan, spicy sunflower seeds, homemade croutons, a pesto vinaigrette, and a virtuous feeling that will last all day.
