Curtis Stone has earned serious acclaim for Maude, his Los Angeles tasting restaurant that focuses on a single ingredient each month. It’s also one of the hardest tables to book in the city — maybe even in the country — and back in March, he told Grub, “At the moment, I’m super happy cooking at a tiny little spot … but maybe we’ll do a second one, one day. You never know.” He’s finally announced his new project, and instead of expanding upon Maude’s concept, Stone is working with Chad Colby — who just left his post as Chi Spacca’s cured-meat specialist. Stone’s brother, Luke, is also onboard. They’re not ready to discuss concept just yet, but hopefully the new L.A.-based project will include some riff on Chi Spacca’s famed Costata alla Fiorentina.
