Now that New York’s taco renaissance of 2014 has passed, it’s time to focus on the pupusa: a traditional handmade (and naturally gluten-free) corn tortilla that often gets stuffed with pork, cheese, and beans. Aside from the beloved Solber Pupusas at Red Hook Ball Fields, most good pupusas require a trip to Queens.

That will change with the opening of Cabalito, at 13 Essex Street, on Friday. Owner Randy Rodriguez will sell five types of fresh pupusas, with fillings that include chicken, ground beef, and “revueltas” — a classic mixture of pork, beans, and cheese. Better yet: Each pupusa only costs $3.50, and it comes with a bright salad made with cabbages and carrots fermented in lime and vinegar. It sounds like this could be a strong Cheap Eats 2015 contender.
