Now that fine-dining chef Brooks Headley is leading the pack with his aptly named Superiority Burger, it’s clear we’re living in a golden age of veggie burgers, and today the renaissance continues with Brandon Byxbe, an enterprising 32-year-old Chicago resident who plans to open a lunch counter where the only thing on the menu will be his signature kale burgers, plus sides. Byxbe has been selling his sprout- and pickle-topped kale burgers at fairs and farmers’ markets for a while now, and he’s just a few hundred bucks short on his very modest Kickstarter for his brick-and-mortar setup with just six days to go. The Amazing Kale Burger will open soon regardless, but extra funds will help this guy get a new oven. Will you help Mr. Kale Burger realize his vegan dreams?
