Jonathan Waxman’s Toronto Restaurant Opens Next Month

Barbuto chef and owner Jonathan Waxman is opening a big new farm-to-table restaurant in Manhattan this fall, he’s working on another in Nashville, and he’s also got Montecito in Toronto with filmmaker Ivan Reitman, with whom he goes back several decades. The bilevel space has 280 seats, an open kitchen, and a patio, the Canadian Press reports, spread out among an immense 10,000 square feet. Waxman tells the paper that he and executive chef Matt Robinson are currently menu planning and getting into the range of local Canadian ingredients. So far, it seems bacon is covered: “You’ve got the greatest pigs in the world 45 minutes from here,” he says. [Canadian Press, Related]
