Ed Scheetz recently changed the name of his portfolio to Chelsea Hotels, and the iconic property will next year enter a new phase as a boutique hotel. The hotelier now has purchased El Quijote, the 84-year-old Spanish restaurant on the ground level, from owner Manuel Ramirez. In May it was rumored that Ramirez was leaving, intimating more drastic changes, but reps assure Eater he will “still be involved” at the restaurant, which will “retain the signature look and feel of El Quijote.” [Eater NY, Related]
