
Roger Fessaguet, who started as a school dropout but went on to pioneer New York’s opulent French fine-dining scene at the restaurants Le Pavillon and La Caravelle, died earlier this week in Maine at the age of 82. At Caravelle, which was open from 1960 to 2004 (Fessaguet retired in 1988), he changed the menu on a daily basis, attracting the attention of New York Times writer Craig Claiborne.
