Keizo Shimamoto’s Ramen Co. Soft-Opens in Lower Manahattan

It was just a few weeks ago that we learned that Keizo Shimamoto, who’s perhaps right now best known for pioneering a hamburger with fried-ramen-noodle “buns,” was hard at work testing soup styles for Ramen Co., his new Financial District ramen-ya. The restaurant is now in previews, and the menu consists of three kinds of ramen, a Wakayama-inspired tonkotsu-shoyu, a Hakata-style shio, and the double-soup “Brooklyn Blend,” which gets a hit of black garlic oil. There are three types of ramen burgers, of course (it’s USDA Prime beef!), and a number of bento-box options round out the opening menu.
