Following in the footsteps of his “World’s 50 Best Restaurants” list peers René Redzepi, Heston Blumenthal, and the brothers Roca, who’ve all made plans to take their Michelin-bedazzled restaurants on the road this year, Grant Achatz says to expect his New York pop-up to be open “for a very short amount of time, undetermined but likely a month, maybe more.” The Alinea chef and owner implies that unlike his 2012 Freaky Friday–esque switcheroo with Daniel Humm at Eleven Madison Park, this one will not be a restaurant takeover, but a kind of extended residence. Other details are scarce, but Achatz says Alinea New York will open somewhere uptown, starting in October. “This is very much a test,” he says, hinting at even more pop-ups. “Why not take it on the road?” [Fine Dining Lovers via Eater, Related]
