Eataku learns that mash-up hamburger creator Keizo Shimamoto, who learned the noodle-soup trade from a posse of ramen masters while living in Japan, plans to serve his recreated version of a particularly beloved tonkotsu-shoyu soup he ate in Wakayama. The chef is expected to open Ramen.Co sometime this year at 100 Maiden Lane, and says that the restaurant will “represent the vision and spirit of what ramen means to me and how I can do my part to make it better.” [Eataku, Related]
