Here are the latest details about Cosme, Enrique Olvera’s anticipated two-in-one Mexican restaurant opening in Flatiron: The Pujol chef tells Food Republic he’s locked up “a little space” in Brooklyn for a tortilleria that will churn out stamped masa for the restaurant using corn from Mexico. Olvera says Alex Stupak advised him to serve standards like guacamole and margaritas, but he’s also planning some inventive one-offs, like charred eggplant that’s mashed to make a kind of guacamole.
