
Ito Shigeru’s ramen pop-up, which used to only be available after-hours at Ushiwakamaru in the West Village, has migrated to Hill & Dale on the Lower East Side, where it’s available from 12:30 a.m. to 4 a.m. Sundays through Wednesdays. Shigeru uses four different kinds of custom noodles to produce tonkotsu, miso-tonkotsu, and shoyu varieties. The late-night ramen sessions just started, but are likely to catch on fast. “Eventually, he’ll get offered money to open his own ramen house,” says Hill and Dale’s Justin Farmer.
