Continuing his well-established mission of preserving the integrity of traditional French cooking against the onslaught of fast-food empires, processed foods, and other culinary evils, Ducasse says that “we must, without sinking to alarmism, be very, very vigilant.” A study released last month indicated that one out of every two sandwiches sold in France in 2012 was a hamburger, which is surely bad news for croque-monsieurs everywhere.
