Long Island-based company Gabila’s, whose knish production line was taken out by a factory fire last October, is up and running again, and the potato frying will resume on Monday. If all goes well, Gabila’s may make a staggering quarter-million knishes in its first week back, so Katz’s chef Kenny Kohn, who was sick and tired of square-knish supporters asking about their return date, will probably get some peace of mind.
