
David Waltuck tells Eater NY that he’ll soon be cooking “contemporary cuisine rooted in classic French technique” at élan, a restaurant he is opening with former Chanterelle general manager George Stinson in the former Veritas space. (Karen Waltuck, who pioneered the city’s downtown fine-dining scene with her husband, beginning in November of 1979, remains an “essential member of the Chanterelle family,” a rep tells Grub Street, but is these days focused on nonprofit and charity work.)
