Justin Hilbert, the wd~50 vet who went on to garner accolades as the opening chef at the well-regarded but now embattled Williamsburg restaurant Gwynnett St., will open an as-yet-unnamed restaurant in Manhattan this spring. As mentioned earlier, it’ll land in the West Village, and Off the Menu reports it will take the place of proprietor Morten Sohlberg’s Smörgås Chef at 283 West 12th Street. The Norwegian chef and owner will close the current iteration of his restaurant on January 20 in advance of renovations. [New York Times, Earlier]
