Thin Mints season is just about here, and the Girl Scouts of America are changing the cookie game forever this year with the launch of a gluten-free Chocolate Chip Shortbread treat. New York City does not appear to be among the twenty test markets scheduled to get a taste of the new product, which uses a mix of rice and tapioca flours in place of wheat. The cookies may be a little bit smaller than their counterparts, but for the millions of Americans with Celiac disease or gluten sensitivities, this is a major coup. The firm that produces the shortbread says it will “conduct research during and after the sale to determine whether to go national with this cookie in the future since ABC Bakers is all about staying on the cutting edge, and bringing people what they want in today’s world.” [ABC Bakers via LAT]
