
In honor of a collaborative meal they planned and cooked together back in 1993, David Bouley will tomorrow night remember his friend the late Charlie Trotter, with a special dinner at the James Beard House. The Tribeca-based chef will serve dishes informed by the food he serves at Bouley and Brushstroke, but also the seasonal, kaiseki-like aesthetic that influenced the chefs’ approaches to food. Tickets cost $250 for members, and $300 for nonmembers; proceeds from the event will support the Charlie Trotter Culinary Education Foundation. The epic meal kicks off a yearlong fund-raising campaign for the nonprofit, which helps students who’ve decided to enroll in culinary school with scholarships and awards.
