The official agenda is not yet posted online, but EV Grieve notices an operator seeking a liquor license for the former Sushi Lounge space at the corner of St. Marks Place and Avenue A has posted the required community notice out front, and chef-owner Alex Stupak’s Empellón is named. “I’d like to do a third restaurant,” Stupak told Grub Street in July. “I’d like it to be rooted in one of the most important and unique ingredients in Mexican cooking: masa,” he explained, detailing how in-house corn processing is the cornerstone of traditional restaurants he admires.
