Husband-and-wife restaurateurs Marco Moreira and Joann Makovitzky, who own Tocqueville, 15 East, and the Fourth, which opened in May, are applying the nesting-doll approach to dining at the latter space: In addition to Botequim, a Brazilian-food-and-tapas restaurant slated to open in the basement beneath the Fourth in early 2014, the pair have enlisted 15 East sushi master Masato Shimizu for the 50-seat Chu Chu, a raw-fish restaurant that will open on the rooftop of the Hyatt Union Square sometime next year, if all goes to plan.

“We are playing around with enclosing the roof,” Moreira tells Grub Street, indicating that Chu Chu will be open year-round. The new spot will feature omakase menus, along with à la carte options, but Moreira says the plan is for the forthcoming restaurant to be less structured overall, and more casual than its Michelin-starred sister across the park. Expect Chu Chu to debut in the spring of 2014.
