Factory Fire Threatens New York City’s Precious Square Knish Supply

A small fire at the Long Island headquarters of Gabila’s Knishes, producer of the iconic “Coney Island Square,” may have been quickly contained, but production will be out of commission until the end of November. “All I have are round baked knishes, no fried square ones,” says Katz’s chef Kenny Kohn. “If you have a suitcase full of money I can’t get you one.” For now, there’s at least one stopgap solution: Kohn says he can “take a round knish, pound it out, turn it into a square and serve it to you” if you’re that desperate.
