Oyamel and Jaleo chef-owner and esteemed culinary educator José Andrés has announced he’s adding yet another restaurant to his portfolio of places around the country: The forthcoming 140-seat China Chilcano will specialize in the fusion of traditional Chinese and Peruvian flavors and dishes, the Washington Post reports, not unlike the chef’s Las Vegas restaurant China Poblano serves a menu of Chinese-Mexican food. Andrés has not yet named a chef at the new space but tells the newspaper he’s hired a “master noodle chef from Beijing” to consult, and says to expect some surprises in addition to a roster of dumplings, fried rice, and ceviche when the restaurant opens next spring.
