
Turns out it’s not just Rick Bayless who’s stepping out of his comfort zone by opening outside of Chicago: Prolific chef-restaurateur and MasterChef judge Graham Elliot will open Primary Food & Drink in downtown Greenwich, Connecticut, sometime this winter. A press release indicates that, in addition to a largely domestic wine list and a roster of classic cocktails, the menu will consist of “creative spins” on late-twentieth-century American food classics like beef stroganoff, Buffalo chicken, and pot roast. Elliot’s longtime operations director Merlin Verrier will serve as executive chef at Primary Food & Drink, and in the meantime, the newly slim Elliot promises to post updates on the restaurant and menu R&D; here.
