Brooklyn’s preeminent pie-baking sisters, Emily and Melissa Elsen, realizing perhaps that it takes all types to make a world, are offering their customers three options this Thanksgiving: (1) Well-organized early birds can preorder pies online here. (2) Industrious DIY-ers can spring for the new Four & Twenty Blackbirds Pie Book (Grand Central Life & Style; $30), and bake their own. And (3), hopeless procrastinators can line up outside the Gowanus bakery in the wee hours of November 26, 27, or 28 and take their chances on the limited first-come, first-serve supply of salty-honey, bittersweet-chocolate-pecan, brown-butter-pumpkin, or salted-caramel-apple ($38 to $40).
