A new study reveals that growing shiitake mushrooms outdoors can be super lucrative for farmers, who are charging $16 per pound. Surprisingly, demand is higher than supply right now. The University of Vermont and Cornell are teaming up to hold workshops and create a guide on how to grow shiitakes in the Northeast, in case you’re in need of a fall project or career change. [AP]
