Dan Silverman Leaves the Standard, Named Chef at Loews Regency Hotel

The former Lever House chef is leaving his current post at the Standard Grill to helm the food-service operations at the Loews Regency, which is expected to reopen after renovations end this fall. Sant Ambroeus owners Gherardo Guarducci and Dimitri Pauli tell the New York Times that in addition to reviving the hotel’s famed power breakfast scene, Silverman will write menus based on Italian-Mediterranean flavors and “adapt some of the classics.” The as-yet-unnamed dining room replaces the hotel’s 540 Park restaurant.
