Exciting news in Taco Town, as The L.A. Times finds former Bastide and Church & State chef and future Republique master Walter Manzke collaborating with Guillermo Campos Moreno of Baja’s Tacos Kokopelli on a menu for Petty Cash. The new taqueria concept is set to take over for John Sedlar’s Playa on Beverly Boulevard with a wall inked by RETNA quoting Mandela and Aileen Getty in the artist’s signature script. Maintaining Sedlar’s appreciation for visuals and the arts, owner Bill Chait pins the concept as “street food meets street art” and envisions the restaurant opening sometime in “the new few weeks.”

Planned dishes include Kokopelli’s “The Kraken,” which L.A. glimpsed at The Street Food Fest last year, as well as portobello tacos, beer-battered wild striped bass tacos, and an off-menu taco with chapulines. Elsewhere, carnitas will be made with Cook’s Ranch pork, with the loin used in a pork ceviche and in the return of Manzke’s pig ear nachos, which will be served along with cocteles using sea urchin, Little Necks, and Santa Barbara spot prawns. Basically, petty cash is what you use for your typical taco truck. At this one, you’re probably going to have to tap a reserve much bigger than what you can collect between the couch cushions.
