Today we’re learning additional details about Sonny’s Hideaway, the new restaurant replacing HPK in Highland Park that first surfaced on Monday. The encouraging early find is that Jimmy Everett, the executive chef leading the kitchen here, is indeed the same Jimmy Everett who worked under Daniel Humm at Eleven Madison Park, Wylie Dufresne at wd-50, and as Michael White’s executive sous chef at Marea and Al Molo in Hong Kong.

At Sonny’s, which is currently hoping for an early May debut on York Boulevard, Everett plans New American dishes of disparate influences, including coffee-braised pork cheeks with coconut milk and local honeycomb, fried sweetbreads, mussels in smoked grape broth and cilantro, and a slow-cooked short rib with bone marrow hash and braised collard greens.

With such lengthy fine-dining experience, Everett’s arrival in the rapidly changing neighborhood sounds like an exciting prospect for Highland Park’s intrepid appetites. Stay tuned for a look at the full menu once the restaurant is ready for its public debut.
