An Update on Michelle Polzine’s 20th Century Café, Due Later This Spring

We caught up with former Range pastry chef Michelle Polzine today about the upcoming opening of her bakery-café project, 20th Century Café (198 Gough Street). She tells us that her prediction of a “spring opening” should hold true, so long as we remember that summer doesn’t start until June 21. (She only got her building permit two weeks ago, after some typical bureaucratic foot-dragging.) And she says the unpredictability of this whole process has been making her a little crazy. “Pastry people are control freaks. That’s why we follow recipes. You know what will happen. I have no idea what will happen, or when. [But] I have a new motto brought to me by an incredible young woman, Adrian Boyes. ‘Well, plan A did not work. Luckily for me I’ve got the whole alphabet!’” Just to remind you, the focus of the place will be the pastries and delicacies of Budapest, Vienna, and Prague, with a fair amount of seasonal fruit.
