Grub hears that Maison Premiere is promoting Lisa Giffen, who has worked with the Williamsburg restaurant as it’s revamped its menu and added more seafood dishes. She’s replacing Jared Stafford-Hill; he got hired less than a year ago (in August 2012). Giffen’s an alum of Blue Hill New York and Daniel, and is big on Creole spices and French and New Orleans influences. Louisiana Crayfish Bread is now on Maison Premiere’s menu, and other new, meatier dishes feature pigeon (with foie gras) and rabbit. All these changes come just in time to enjoy the restaurant’s lovely outdoor garden.
