Rigo Salas Named Chef at Don’t Tell Mama; Andy Sonnefeld Takes Over at Marcona

Who’s in the kitchen at Don’t Tell Mama, the New York cabaret and restaurant that opened in West Hollywood this past Tuesday? Today Grub Street learns it’s Rigo Salas, the former senior sous at Polo Lounge, private events chef at Soho House, and past executive sous at The Four Seasons Hotel in Beverly Hills who helped to open Culina with Victor Casanova. Salas is also a graduate of the C-Cap program, worked with our new BFF Marcus Samuelsson at the DreamWorks Oscar party, is currently expecting his first child with Comme Ca exec chef Lauren Cartmel, and serves as a mentor at Homeboy Industries. While we’re thrilled at the prospect that the venue’s performers may now have to reprise the entire oeuvre of Gerardo to honor chef Rigo’s entrance each night, you can check out his full menu dishes below to see what he will prepare.

In other chef switches (cuz every day they’re shufflin’!--sorry), Melrose’s Marcona announces the hire of Andy Sonnefeld, who worked at The Foundry and Philly’s Victoria Brewing Company, as its new executive chef.

In addition, the place plans a ten-day closure from March 10 to 20 to revamp the restaurant and make a few tweaks to the menu, including scaling down the sides and upping the sandwich count. Changes include the installation of a drip-coffee and ice coffee system, with the java coming from a big name in coffee providers that they won’t tell us yet.

A press release also tells us Sonnefeld collaborated on the revised menu with a “silent” consulting chef. So we’re thinking, ummm…maybe this guy?
