The number of first-rate European-style bakeries in town may be growing, but glacially (especially in the critical close-to-our-house market). One of the city’s oldest Spanish restaurants is stepping into the gap, though: pioneering tapas spot Cafe Ba-Ba-Reeba! has launched direct to customer sales of its in-house baguettes, made according to a classically simple recipe:

Made by hand, in house every day, the bread consists of three simple ingredients: flour, salt, and water… the team uses 100% organic high extraction flour, pure Mediterranean sea salt and purified water. The dough is leavened with a wild yeast starter, or “levadura” in Spanish, and then undergoes a two day fermentation process, bringing out the sweetness in the wheat, coupled with a slight tang.

You can buy directly from the hostess stand, or place an order at 773-935-5000; a large baguette is $5, a small one $3.
