One Up Restaurant Opening at the Grand Hyatt November 14

The Grand Hyatt, the tall one that’s just up from Union Square, has been undergoing a $70 million renovation over the past year which is taking the original restaurant and lounge on the 36th floor and relocating it to the mezzanine level just off the lobby. It opens November 14, and it’s called One Up Restaurant & Lounge, and it comes with a brand new culinary team, an NorCal bistro concept, a cocktail program from bar star Scott Beattie, and a swank new space that you can see an animated rendering of in the video below.

Connecting the restaurant and bar will be a walkway along which will be a wine and liquor library, a sommelier counter, and touch-screens where guests will be able to peruse the cellar offerings and booze selection. Also there will, obviously, be iPad wine lists.

The lounge features a cozy room adorned with big black-and-white images of rock stars like Jim Morrison and Joni Mitchell, as a tribute to San Francisco’s role in incubating rock-and-roll culture in the late sixties and early seventies.

The new kitchen staff includes executive chef Ian Libberton, who’s been with Hyatt Hotels for a number of years, and chef de cuisine Adam Nichol who comes over from the Grand Hyatt New York. Scott Beattie will clearly be classing up the bar program, and the sommelier is still to be named. A couple of example dishes on the still not finalized menu: “One Up” Cioppino with Dungenss crab; and Marin Sun Farms lamb Bourguignon with pappardelle, hedgehog mushrooms, parsnips, and lemon-mint pistou.

This of course means that the long-lived Grandviews Restaurant on the top floor of the hotel will be closing after this new buildout is complete. It’s a significant change given that the hotel is currently building kitchen where there never was one on the mezzanine level, and doing all this with an ultra-fast turnaround so that it’s ready for the holiday season.
