Humble Potato is ready to open this Friday evening in Westchester, revealing a smooth gray space popping with cult U.S. and Japanese toys, jocular signage, and bright red chairs behind a facade of Geisha vogue-ing those “see no evil, hear no evil” steps. As owner Eric Ong told us earlier this month, the Humble one isn’t looking to replicate Umami, FukuBurger, or the soon-to-come Bachi Burger. It just plans to open as a solid neighborhood spot with a U.S. comfort menu of burgers and dogs bearing a Japanese lilt (thus the “hambagas” and “hotdogguh”), a fairly intuitive expression of some of L.A.’s favorite flavors, really, though this obviously hasn’t stopped a lot of people from drawing conclusions.
