
The 38-year-old restaurant’s proprietor Sirio Maccioni tells Florence Fabricant that he is looking to replace executive chef Olivier Reginensi, whose menu was the focal point of last month’s lackluster, one-star New York Times review. “The kitchen,” wrote Pete Wells, “gave the impression that it had stopped reaching for excellence and possibly no longer remembered what that might mean.” Of Reginensi, Maccioni diplomatically tells Diner’s Journal: “He is a very good chef and he is still in the kitchen.
