We’re yet to catch up with former Vu chef and Richard Blais acolyte Kyle Schutte, but see that his duck reuben and stuffed French toast at new 54Twenty in Hollywood are racking up five-star raves on Yelp. For five days next month, Schutte plans to serve a six-course prix fixe menu from November 5 to 10 at $65 per person, including both tax and tip. The first and last nights of the BYOB dinner have already sold out, Schutte says, giving us a peek at his planned menu, which features trippy dishes like baby beets with aerated avocados, pickled raspberries, guanciale, and whipped Humboldt Fog, as well as bruleed pork loin with red wine poached eggs, and the return of the chicken-fried watermelon he served at Vu. Check out the chef’s full menu below and make reservations for one of the nightly 6:30 P.M. seatings at 323-464-1570.
