Timothy Hollingsworth, who’s now been chef de cuisine at The French Laundry and therefore Thomas Keller’s right-hand-man for over three years now, is making a rare appearance in San Francisco on December 3 as part of a Gilt City event. He’ll be cooking for an intimate cocktail party and demo at Cookhouse (253 Columbus Avenue) centered around holiday appetizers, which will feature wine, charcuterie, and a discussion with Hollingsworth about his techniques. We’re promised the dishes will include a potato blini with California white sturgeon caviar, sugar pie pumpkin soup with a holiday spiced mousse, and fall flambé with chestnut, persimmon, black truffle, and Andante Dairy goat cheese, as well as others, and guests will go home with recipe cards, and photos with the chef. Tickets go on sale at 11 a.m. at Gilt City, and cost $185. [Earlier]
