Check Out the $15,000 White Truffle They’ll Be Shaving at Cyrus For Their Final Weekend

Chef Douglas Keane and partner Nick Peyton, as you know, are shuttering their Michelin two-starred restaurant Cyrus after this weekend. But they’ll be going out with a bang, serving some of the restaurant’s greatest hits of the last seven years, upon which will shaved slices of this gargantuan white truffle, just imported from Umbria. Keane tweeted that the mushroom weighs in at one pound, two ounces, and he says it’s the biggest one he’s ever worked with. “We call him Bob,” he jokes. BiteClub reports that the truffle wholesaled for $5,600, and the value of it will be somewhere between $10,000 and $15,000 once the restaurant charges for all those truffle supplements, a few shavings at a time. The restaurant’s last night will be Sunday, October 28, with only private events to follow.
