
Marta Teegan and Robert Stelzner, the owners behind Echo Park’s sustainable market Cookbook are gearing up to open a new restaurant project called Cortez. Building on its responsible-resource approach to food, Cortez will offer a consistently morphing menu of locally procured organic produce, sustainable seafood, and pasture raised meats, along with pickles and charcuterie made in house for breakfast, lunch, and dinner seven days a week. The restaurant has even been seeking a kitchen staff with butchering and baking expertise, raising hopes higher for a conscious collection of great homespun dishes.
On October 28, the restaurant will host a dinner of tapas and drinks with photographer Todd Selby, whose latest book of portraits, Edible Selby, features a profile of Cookbook, the only L.A. business to make it in. Reservations are available with the restaurant via email.
