
We had an excellent meal at Prospect last week, made all the more excellent by an off-menu dish that chef-partner Pamela Mazzola sent out to us featuring Venetian black risotto, a poached egg, and some extra-fresh sea urchin. Little did we know Mazzola was planning to unveil the dish as a Giants-inspired secret menu item (the uni is bright orange, you see, to go with the black rice), available to anyone who knows to ask.
If only we’d known in time for our off-menu item feature last month!
Perhaps Mazzola is just riding the wave of World Series fever right now in deciding to go public with the dish — she tells NBC that it was specifically inspired by Barry Zito’s performance last week in Game 5. But you should know it will be in limited supply subject to the availability of fresh uni. It’s a fantastic, comforting, soulful dish that sings of the sea. And that black risotto — like Forbidden rice in that it’s naturally black, no squid ink here — is perfectly cooked and seasoned. The egg, by the way, is topped with sea salt, seaweed, and sesame.
