West Village wunderkind Gabe Stulman tells Eater today he is partnering with Momofuku vet Tien Ho to lead his forthcoming, as-yet-unnamed “French-American bistro concept.” Stulman will first open an izakaya-influenced restaurant called Chez Sardine this fall at 233 West 4th Street, the latest in his so-called “Little Wisco” portfolio. The restaurateur says the bistro is in its early planning stages but will demonstrate Ho’s “considerable range.” Ho, who left the Momofuku group last October, will be the chef and a partner at the new restaurant. The chef will chip in at Stulman’s other restaurants as a warm-up to opening the new spot. [Eater NY, Earlier]
