Earlier this year, there was a bit of a chef shakeup at Wave. Kristine Subido, the longtime exec chef at the W Lakeshore’s flagship resto, decided to move on to helm her own spot, Pecking Order, leaving Wave chefless until, in July, chef Greg Elliott, formerly of Lockwood restaurant at the Palmer House, moved into the top spot at Wave. Gone are the days of Asian influenced farm-to-table fare that Subido so lovingly injected into her menu, paying homage to her Filipino heritage. The new menu has both French and Italian influences, but still uses locally sourced ingredients wherever possible. Get to know chef Elliott in the video below, and take a look at Wave’s new menu.
