Finding Grace: Factoring Service Flow (and ‘Tron’) Into a Restaurant’s Design

In the fourth installment of our exclusive web series Finding Grace: The Making of a Restaurant, chef Curtis Duffy and general manager Michael Muser walk us through the partly built-out Grace space to show us how they’ve designed the restaurant for optimum flow — from kitchen to dining room and back — to create their idea of perfect service. It’s invisible to the diner, utterly efficient, and above all gracious. For Duffy, it reminds him of Alinea — whose kitchen he also helped design.
