If Southern chef Brandon Boudet can tackle U.K. eats at Tom Bergin’s, it would only be fair to let British chef Gavin Mills to take on Southern cooking at Wood & Vine. Every Sunday, Mills is going down home on Hollywood, offering a showcase of a different Southern state each month. Mills will start out with South Carolina to finish-off August, with an a la carte selection that includes grilled pork chops, chicken and waffles, croutons made with grits, and she crab soup, and will then wrassle with Louisiana fare for September starting Labor Day weekend with an oyster roast held on the restaurant’s patio, combined with dishes like seared salmon with red rice risotto, oyster po’boys, and fried chicken with buttermilk biscuits.
