Kevin Pang looks at Bistro Campagne, which suffered the sudden death of its owner, Michael Altenberg, in March, to see how a restaurant deals with the passing of the figure in whose image it was made. He notes in particular the longevity of three classic French dishes Altenberg had kept on the menu, in and out of fashion:

Those three dishes will remain on the menu as long as the restaurant is open. There might not be a better tribute to a chef than this, because for all the strides he made in the farm-to-kitchen end, he knew that ultimately it was about pleasing the kitchen-to-diner end.
