If you thought Girl & The Goat was long in the making, it’s nothing compared to The Trenchermen, which is the culmination of a dream of working together that Mike and Pat Sheerin have had ever since they started working in kitchens. Even Mike’s return to the Chicago area to take over Blackbird was, in part, a longterm move in that direction, putting him back in the same city where his brother was running The Signature Room. And the steady stream of events they staged over the last several months gave us some idea of what they’d ultimately be serving, though it remains the case that apps aren’t entrees and the ultimate menu was still a bit of a mystery. So though we’ve talked with the brothers and shown you the interior, only now, with the restaurant’s official opening on July 12 (following a week or two of soft opening), have we had a chance to see what their menu is really all about. Our man Huge Galdones went inside the new Wicker Park hotspot and returned with a cornucopia of delectably toothsome— whoops, we mean some really great-looking shots of the creative and interesting food.
