Introducing Satellite Republic, a Chechan Street Food Cart

Former Meadowood pastry chef Boris Portnoy is Russian by birth and recently took a trip to Georgia and Chechnya where he apparently fell back in love with the street food there. It was something he was familiar with growing up, he tells Eater, but only recently decided to bring some of it to the food scene here with a moped-powered, mobile tandoor operation called Satellite Republic. He says he’ll be doing made-to-order breads and offering things like a lamb sandwich with a Georgian sour-plum sauce called tkemoli. He just had an official launch party in Precita Park on Sunday, and tomorrow, July 11, he’ll be popping up next door to Four Barrel, outside of No Shop (389 Valencia Street), from 5 to 8 p.m. [Eater]
