A rep tells Grub Street that Jason Santos has taken over the cocktail program at his Blue Inc. from Trish LaCount, who has moved to Australia. What to expect? The same bad-ass-named cocktails (“Pimp’s Cup,” anyone?) that are “playful, yet not overly complicated.” He’s also reworked the lunch and dinner menus to include curiosities like pastrami dumplings and braised veal torta, which no doubt pair quite well with pimpin’ beverages.
