
Victor Casanova’s tiny Gusto on Third Street is a clear-cut stand-out among the recent flood of new Italian restaurants deluging L.A. His particular, passionate approach finds him armed with market cargo and lending a precise, personal flair to colorful regional dishes including braciole, beef heart carpaccio, veal sweetbread milanese, and gargati with fennel sausage, making his own pasta and pizza in a salute to The Boot. Today, Gusto begins lunch service, building on its menu with day-time dishes like a sweet summer corn risotto replacing the Arborio with farro, chicken sandwiches with fontina and white anchovy aioli, a skirt steak with Tuscan fries, baccala croquettes, and squid ink agnolotti with sea urchin and more sweet summer corn.
